Banana-Walnut Muffins



Alright, here's my new favorite banana muffin recipe! These are sooo yummy, pretty low in fat and make the house smell great too!

1-1/2 cups flour
3/4 cup sugar
3/4 cup walnuts, coarsely chopped
1-1/2 teaspoons baking soda
1/4 teaspoon salt
1/4 cup canola oil
1/4 cup plain or banana yogurt
1 large egg
1-1/4 cups very ripe bananas, mashed (2 or 3)
3 tablespoons buttermilk

Spray a 12 cup muffin tin with cooking spray or line with paper liners. Preheat oven to 375. In a large bowl, combine the flour, sugar, walnuts, baking soda and salt; stir well. In a medium bowl, whisk together the oil, yogurt, egg, bananas, and buttermilk; blend well. Add to the dry ingredients and beat well until evenly combined. Spoon the batter evenly into muffin cups, filling 3/4 full. Bake until golden and springy to the touch, 20-25 minutes. Transfer to a wire rack and cool for 5 minutes. Unmold the muffins.
