My husband makes these delicious pancakes every week. We tried several recipes and never found anything as light and fluffy. They're great with sliced bananas and coconut syrup!
2-1/2 cups flour
1/2 cup sugar
2 teaspoons baking soda
2 teaspoons baking powder
2 pinches salt
1/2 cup oil
2 eggs
2-1/2 cups buttermilk
Mix dry ingredients together. In a medium bowl, combine oil, eggs and buttermilk. Whisk buttermilk mixture into dry ingredients; mix well. Cook on hot griddle.
