1 head Romaine lettuce, torn
4 ounces shredded swiss
1 cup cashews
1/4 cup dried cranberries
2 apples, thinly sliced and chopped
2 pears, thinly sliced and chopped
Dressing:
1/2 cup white sugar
1/2 cup lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon salt
2/3 cup canola oil
1 tablespoon poppy seeds
Combine lettuce, cheese, nuts and fruit in a large salad bowl. Mix dressing ingredients together and chill. Pour over salad just before serving and toss to combine.
