Aunt Fran's Spinach Frittata

2 tablespoons butter
3 eggs
1/2 cup light biscuit mix
1/2 cup milk
1-8 ounce shredded colby jack cheese
1-10 ounce frozen spinach, thawed

Melt butter in an 8" square baking dish.  In a medium bowl, whisk together the eggs, biscuit mix and milk. Stir in cheese and spinach and pour into baking dish.  Bake at 350 for 40 minutes or until golden.

This is delicious and just right for any time of the day.  Great with fresh fruit and english muffins!
