Blueberry Orange Bread


This bread is delightful! The texture is a little "spongy" since it's so low in fat, but the orange/berry flavor is wonderful!


2 cups flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup orange juice
1/3 cup water
2 tablespoons butter, melted
2 tablespoons grated orange peel
3/4 cup blueberries

In a large bowl, combine the first 5 ingredients.  In a small bowl, combine egg, juice, water, butter and orange peel.  Add to dry ingredients and mix just until moistened.  Fold in berries.  Pour into a greased and floured 8x4 inch loaf pan.  Bake at 350 for 65 to 70 minutes.  Cool 10 minutes, then remove from pan.
