Banana Coffee Cake with Orange Glaze

I love making this cake for overnight guests. It's simple to make and a delicious way to start the day!

3 cups flour
2 teaspoons baking powder
3/4 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
3 beaten eggs
2 cups mashed banana (5-6 medium)
1-1/2 cups sugar
3/4 cup canola oil
1-1/2 teaspoons finely shredded lemon peel
1/2 cup chopped walnuts


Orange Glaze:
1-1/2 cups sifted powdered sugar
2 tablespoons, or more, orange juice


Lightly grease a 10-inch bundt pan; set aside. In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon and nutmeg. Make a well in the center of the dry mixture; set aside. In another bowl, combine eggs, banana, sugar, oil and lemon peel. Add egg mixture all at once to dry mixture. Stir just until moistened (batter should be lumpy). Fold in nuts. Spoon batter into prepared pan. Bake in a 350 degree oven for 45-50 minutes or until wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Wrap and store overnight. Before serving, prepare orange glaze; add more orange juice if necessary to make glaze of drizzling consistency. Drizzle cake just before serving. 16 servings
