Indiana Spinach Salad

I found this in a magazine years ago and have made it several times-it's my hubby's favorite spinach salad!

6 cups fresh spinach
2 hard-cooked eggs, chopped
1/4 cup fresh grated parmesan
Dressing:
1/4 cup light brown sugar
2 teaspoons (more if needed) water
1 tablespoon red wine vinegar
1/2 cup light mayonnaise
4 slices bacon, cooked crisp and crumbled

Combine the dressing ingredients, mix well and refrigerate. Place spinach in a large bowl; sprinkle egg and parmesan over salad. Drizzle with dressing.
