Kentucky Peach Cobbler



I love summer and all the wonderful fruit it brings and I love cobblers! They're so simple, and yet so delicious! I made this cobbler a year or two ago and must have thought it was pretty special because I stuck it in my "favorites" file. After making it the other night (Aug. '11), I'd have to say it's definitely our favorite! A few of my kids don't even care for peaches and yet they loved this! 'Sorry for the shadowy picture-we ate this late in the day and I snapped this just as the sun was going down. I love photography, but with 7 kids, a hard working hubby and some critters to feed and care for, I'm learning not to be a perfectionist! It's more fun that way! This really is so easy-I made an extra one for a friend who just had a sweet baby girl. This is perfect for that kind of thing.....just pop it in a foil lasagna tin. One more note on the recipe-I actually cut the sugar to 1 cup (using 1/2 cup to sprinkle over peaches instead of the 3/4). The peach flavor was delicious and not too sweet. You'll definitely want to try this!

6 medium ripe peaches, peeled and sliced (about 4 cups)
2 tablespoons butter, softened
1-1/4 cups sugar, divided
1 teaspoon vanilla
1 cup flour
2 teaspoons baking powder
dash salt
1/2 cup milk
1/2 cup cold water

Arrange the peaches in a greased 11x7 baking dish. In a mixing bowl, combine butter and 1/2 cup sugar. Beat in vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. Pour over peaches; sprinkle with remaining 3/4 cup sugar. Pour cold water over top. Bake at 350 for 35-40 minutes or until golden brown. Serve warm with ice cream. 6 servings.
