Apple Cider Dessert

We love this flavorful jello! It's perfect for fall and is great as a side dish or light dessert.

1 package (4-serving size) gelatin, any flavor
(raspberry or cranberry are great)
3/4 cup boiling water
1/2 cup cold apple cider or juice
ice cubes
1 medium unpeeled apple, cut into matchstick pieces
(about 1-1/2 cups)

Completely dissolve gelatin in boiling water. Combine cold cider and ice cubes to make 1-1/4 cups. Add to gelatin, stirring until slightly thickened. Remove any unmelted ice. Stir in apple. Pour into serving bowl or dessert dishes. Chill until set, about 1 hour. Garnish with apple slices brushed with lemon juice, if desired.
