Lavender Lemonade

The aroma and flavor of lavender in this lemonade was a hit with my entire family! If you use Hidcote lavender, you'll end up with a lovely rosy pink lemonade. I'm not sure what type I had bottled up but it was delicious just the same!

1 cup sugar
5 cups water, divided
1 tablespoon dried lavender
1 cup freshly squeezed lemon juice or "Real Lemon"
ice cubes
lavender sprigs for garnish

Combine sugar with 2-1/2 cups water in a medium pan. Bring to a boil over medium heat, stirring to dissolve sugar. Add the dried lavender to the sugar water, cover and remove from heat. Let stand at least 20 minutes or up to several hours. Strain the mixture and discard the lavender. Pour mixture into a glass pitcher. Add lemon juice and another 2-1/2 cups water. Stir well. Serve over ice.
