When we were dating, my hubby told me that he didn't like sweet potatoes.....then he tried my sweet potato pie.....and then he tried my sweet potato casserole. I still can't get him to love those candied yams, but 2 out of 3 ain't bad! This is one of his favorites I spoil him with each year.
1-1/4 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 eggs
1 can evaporated milk
1 teaspoon vanilla
1-1/2 cup mashed cooked sweet potatoes
Topping:
1/3 cup butter
1/3 cup flour
1/2 cup brown sugar
1/2 cup shredded coconut
1/2 cup chopped pecans
In a mixing bowl, blend sugar and spices. In another bowl, beat eggs; add milk and vanilla. Combine with sugar mixture. Stir in potatoes; beat until smooth. Pour into a pie shell. Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees and bake for 30 minutes. In a small bowl, combine topping ingredients. Remove pie from oven; sprinkle with topping. Bake for an additional 10 to 15 minutes. Great with cinnamon whipped topping.
