I picked up this recipe card at my local fruit stand. I'm putting it on here not because they're the most awesome, 'you've got to try these' apple muffins. But they're really good when you're in the mood for a simple, healthy muffin and I'll definitely make them again! I do like having an array of 'healthier' recipes for muffins and other breakfast items. It's such a good feeling to wake up on a busy school day to a hot cup of coffee and a fresh muffin! I'm also thankful my kids will not only eat muffins like these, but actually enjoy them! I guess their taste buds haven't been ruined by those waxy, preservative-laden things called baked goods at the grocery store! :)
1-1/2 cups white whole wheat flour
1/2 cup sugar
1 tablespoon baking powder
1 teaspoon cinnamon
2/3 cup apple juice
1/3 cup canola oil
1 egg
1-1/4 cup apples, cored, peeled and finely chopped
Topping:
1 teaspoon sugar mixed with 1 teaspoon cinnamon
Preheat the oven to 375 degrees. Spray a muffin pan with cooking spray. In a medium bowl, combine the flour, sugar, baking powder and cinnamon; blend well. In a small bowl, combine apple juice, oil and egg; mix well. Add the juice mixture to the dry ingredients and stir until moistened. Fold in chopped apples. Fill muffin cups 2/3 full and sprinkle with cinnamon sugar topping. Bake 20 minutes or until golden brown. Cool 1 to 2 minutes before removing from pan. 12 muffins
