Baked Chicken Nuggets





My children love chicken nuggets!    These are not only more delicious than anything you could ever get at a drive-thru, but they are incredibly easy too! (and healthier!)  They're also great to have on hand in the freezer. Just place uncooked prepared nuggets on a cookie sheet and "flash freeze" (freeze for an hour or two) then remove and place in a freezer bag.  This is one of those easy meals where I never use a recipe.  I always keep a large container of bread crumbs in my freezer and just pull out what I need to coat the chicken.  Very simple, but very good! 

boneless, skinless chicken breast, cut into 2-inch chunks
finely crushed saltines, or dry bread crumbs
salt and pepper or other seasonings
canola oil

Place saltines in a medium bowl and season with salt, pepper and any other seasonings. Pour a little canola oil in a shallow bowl. Dip chunks of chicken in oil, let oil drain off into bowl, then coat in cracker crumbs. Place in a baking pan lined with foil.  You can lightly spray nuggets with cooking spray for a little extra crispiness.  Bake at 375 degrees for about 25-30 minutes or until nicely browned. Great with honey!
