Pear and Walnut Salad with Gorgonzola

There's nothing in the world I love more than a great salad and a chunk of buttered rustic bread!  Not surprising, my favorite "fast" food is Panera Bread!  I've been experimenting with different salads to send with my hubby for work and to also enjoy at home.  I'm still working on the dressing for this one-I'd like to play around with the ingredients to give it even more pear flavor, but it was still a winner with my daughter and me!  A raspberry vinaigrette would be great with this too.  The flavors are wonderful!

Salad:
2 cups Romaine lettuce or Green Leaf lettuce, torn
2 cups Boston Bibb lettuce, torn
1 Red pear, cored and thinly sliced
4 tablespoons toasted walnuts,  roughly chopped
4 tablespoons Gorgonzola, crumbled

Pear Vinaigrette:
3 tablespoons pear juice
1 tablespoon Pear Infused Vinegar
2 tablespoons olive oil
1/8 teaspoon fresh ground black pepper

Combine the pear juice and vinegar in a small bowl and mix well with a whisk.  Slowly stir in the olive oil; whisk to combine.  Assemble lettuces on salad plates and top with sliced pear, walnuts, and gorgonzola.  Drizzle with vinaigrette.  Serves 2
