Napa Valley Chicken Salad

I absolutely love Panera Bread's chicken salad and was trying to find something like it.  This is pretty close and I find it's definitely creamier than my chicken salad with straight mayonnaise.  If you're making this ahead of time, it's a good idea to add your almonds just before serving so they'll be nice and crunchy.  This is a great summer salad!

2 pounds cooked shredded or diced chicken breast
1 cup mayonnaise
3 tablespoons apple cider vinegar
5 tablespoons honey
salt and pepper to taste
1 cup red grapes, halved
1 cup chopped or sliced almonds

Combine mayonnaise, vinegar and honey in a small bowl and whisk well.  Season, to taste, with salt and pepper.  Place cooked chicken in a large bowl and combine with dressing.  Fold in grape halves; add almonds just before serving.
