1 pound boneless skinless chicken breast, cut into
bite size or 3-inch pieces (tenderloins work well)
1/3 cup butter
1/3 cup honey
3 tablespoons yellow mustard
1 teaspoon salt
1 teaspoon sweet curry powder
Melt the butter in a small saucepan over low heat. Whisk in the honey, then add mustard, salt and curry powder. Place the chicken pieces in a 9x13 baking dish. Pour honey mixture over chicken and coat evenly. Place in 350 degree oven and bake 45 to 50 minutes, until golden brown. Stir every 15 minutes to coat with the honey mixture. Serve over rice.
