Lemon Thyme Salmon


I love making my children their favorite birthday meal-I always know what each one wants.  This year my sweet 10-year-old daughter blessed me with my favorite dinner-salmon.  She wouldn't let me in the kitchen, so her daddy just gave her a few ingredients and let her be while he worked on my coconut cake- (I begged, no, pleaded not to have chocolate!  :)  My, was I surprised and very proud of her too!  It was absolutely delicious and will definitely be a birthday dinner I won't forget!

1 large salmon filet
salt and pepper, to taste
freshly grated lemon zest and juice
from 1 lemon
olive oil
fresh lemon thyme

Line a 9x13 baking dish with a layer of heavy duty foil.  Place salmon skin side down in dish.  Sprinkle lightly with salt and pepper.  Drizzle with olive oil, fresh squeezed lemon juice, and desired amount of zest.  Bake at 375 degrees for 20-25 minutes, or until flaky.  Serve with fresh lemon thyme.
