A friend of mine made these and I think they've got to be the best zucchini muffins I've ever tried! Perfectly spiced, moist and delicious! Thanks Elizabeth :)
2 cups brown sugar (or half granulated, half brown)
3 eggs
1 cup canola oil
2 teaspoons vanilla
3 cups grated zucchini
3-3/4 cups flour
2 teaspoons cinnamon
1 teaspoon salt
2 teaspoons baking soda
1/4 teaspoon baking powder
1 cup raisins or dried cranberries
Preheat the oven to 350 degrees. In a medium bowl, combine the sugar, eggs, oil, vanilla, and zucchini. Beat well. Combine the dry ingredients together in a large bowl (flour through baking powder). Add the sugar mixture to the dry ingredients and combine well. Spray muffin cups with cooking spray or use paper liners. Fill 2/3 full with batter. Bake for 20 minutes. Yield: approximately 3 dozen muffins
