I'll always remember my mom and aunt making potato pancakes like these when I was little. Just a simple thing, really, but those hot potato cakes always tasted so good! I whipped some up for lunch today and they're now a favorite with my kids. I made one batch with a little wild rice I had left over and they tasted great! They're best served the same day, but if you have any left over, just reheat in the oven.
3 cups peeled potatoes, finely shredded
(drain slightly)
1/4 cup grated onion (I used sweet)
2 eggs, well beaten
1-1/2 tablespoons flour
1/8 teaspoon baking powder
1/2 to 1 teaspoon salt
In a large bowl, combine the potatoes, onion, and eggs; mix well. In a small bowl, mix together the flour, baking powder, and salt. Add to potato mixture and combine well. Drop by generous tablespoons onto a hot, greased griddle. Brown on both sides until cooked evenly. Makes 12, 2-inch pancakes.
