Shredded Savory Pork





My friend Nichole makes this delicious shredded pork to use in burritos.  It is so flavorful, my kids and hubby love it just the way it is.  'Super easy to just throw it in the slow cooker and it's a great alternative to regular beef tacos.   

1  3-pound boneless pork loin
8 cloves garlic, minced, or
2 teaspoons garlic powder
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons ground oregano, crushed
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground red pepper
(I used Aleppo pepper)
1 cup beef broth

Trim fat from the meat.  Combine all the dry ingredients in a small bowl and rub into the meat.  If you're using the oven, just place in a roasting pan that has a cover.  Add beef broth to bottom of pan; cover and roast at 325 degrees for 2-1/2 to 3 hours, or until very tender.  For the slow cooker, place in a 3-1/2 to 5 quart cooker and add beef broth.  Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours.  When meat is finished cooking, remove from liquid with a slotted spoon.  Use a fat separator to remove excess fat, reserving the liquid.  Allow meat to cool until you can handle it, then shred using 2 forks to pull it in opposite directions.  Now add 1/4 to 1/2 cup reserved cooking liquid to use as taco filling.   From Better Homes and Gardens
