Coconut Sorbet

These past few days of December have been unbearably cold and what do I decide to make?  Sorbet!  The kids thought I was crazy, but hey, it's coconut!  My kids really liked it-they said it tasted like coconut snow.  I think this would be great used in a punch or with a little tropical fruit on the side.   


1/2 cup water
11 tablespoons granulated sugar
2 cups coconut milk, unsweetened
pinch of salt
1 teaspoon pure vanilla extract, optional

In a medium bowl, combine 1/2 cup water, sugar, coconut milk, extract, and salt.  Whisk together until well combined and sugar has completely dissolved.  Transfer to a chilled ice cream maker and freeze according to manufacturer's instructions.  Store, frozen in an airtight container, up to 3 weeks.
