Apple Bread

This is a fall favorite we make every year! I try to make at least 10 loaves at a time as it freezes well and makes great gifts.

3 cups flour
2 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup canola oil
2 cups sugar
2 eggs, beaten
1/2 teaspoon vanilla
2 cups coarsely chopped peeled apples
1 cup broken walnuts

In a large bowl, combine flour, cinnamon, baking soda, baking powder and salt; set aside. Combine oil, sugar, eggs, vanilla and apples; stir into dry ingredients. Add nuts. Divide mixture between two greased 8x4 inch loaf pans. Bake at 350 for 40-45 minutes or until bread tests done. Cool for 10 minutes on wire rack before removing from pans.
