The Best Bran Muffins

I've never been a big fan of bran muffins until I found these. They are so moist and the maple syrup on top is delicious! Oat bran can be found in the cereal or health food section at most stores. I try to pick up a year's supply from an Amish store I visit, then just freeze it.

2 large eggs
1/4 cup light brown sugar
1 cup low fat milk
1/4 cup canola oil
1 1/2 cups wheat bran cereal
1/2 cup oat bran
1/2 cup flour
2 teaspoons baking powder

Grease muffin cups or use paper liners. Beat eggs and brown sugar in a medium-size bowl until smooth. Whisk in milk and oil. Stir in wheat bran cereal. Let soak 10 minutes or longer. Thoroughly mix oat bran, flour, and baking powder in a large bowl. Add soaked bran mixture and fold in with a spatula just until dry ingredients are moistened. Scoop batter into muffin cups. Bake for 20 to 25 minutes at 375. Place on a rack to cool. Brush muffins with pure maple syrup as soon as they are removed from the oven.
