Cracker Crumb Chicken

I'm not afraid of a complicated dish, but let's be honest, it's always great to have a simple recipe for those crazy days.  This is so easy it's almost embarrassing to post it.  But it is so delicious, so moist, and I always have requests for it.  This is another standby for taking a meal to someone; easy to do the night before too.  Perfect with Italian Style Rice.



boneless, skinless chicken breasts
canola oil
finely crushed saltines
salt, pepper, 
grated parmesan, dill, or any other spice you want to try

Season crackers crumbs with salt and pepper and place in a large bowl.  Pour a small amount of canola oil in a shallow bowl.  Dip chicken breasts in oil then coat with cracker crumbs.  Place in a 9x13 baking pan lined with heavy duty foil.  Bake at 350 for about 45 minutes or until nicely browned.  (For even crispier chicken, drizzle a small amount of canola oil or butter on top.)
