Sausage Corn Chowder


This is perfect for a fall day with a nice salad and a piece of apple pie!

1 pound smoked sausage
3 large potatoes, pared, and diced
1-1/2 teaspoons salt
1 teaspoon basil
1/8 teaspoon pepper
2 cups water
2-16 ounce cans cream corn
1-16 ounce can whole corn
5 ounces of evaporated milk

Cut sausage into small chunks and brown over medium heat. Set aside.  In a large stock pot, combine potatoes, salt, pepper, basil and water.  Cover and simmer for 15 minutes, until potatoes are tender.  Stir in sausage, corn and milk.  Cover and heat just until boiling.
