English Muffin Bread #1




My kids love this bread!  It's extremely easy and delicious toasted, with apple butter. 


5 cups flour
2 tablespoons honey
2 teaspoons active dry yeast
1/2 teaspoon baking soda
3 tablespoons wheat germ
2 teaspoons salt
1 egg
2 1/2 cups milk
yellow cornmeal for dusting pans

In a medium saucepan over low heat, warm milk to 90 to 110.  Add honey and mix well.  In a large mixing bowl, combine 3 cups of the flour, yeast, baking soda, wheat germ and salt.  Add milk mixture to dry ingredients and beat well with hand mixer for 2 to 3 minutes.  Add egg and beat 1 minute longer.  Add remaining flour, 1 cup at a time, mixing well with a wooden  spoon until flour is wet.  Grease 2 bread pans and sprinkle with cornmeal.  Divide batter evenly between pans.  Sprinkle tops with cornmeal.  Cover and let rise to top of pans, about 45 minutes.  Bake at 375 for 20-25 minutes or until nicely browned.  Remove and cool on wire racks.
