Easy Oven-Baked Brown Rice

This recipe is so yummy and easy to prepare, I never do brown rice on the stove anymore!


3 cups brown rice
4 2/3 cup water
2 tablespoons olive oil
1 teaspoon salt


Spread rice in a 9x13 baking pan. In a medium, covered saucepan, bring water and oil to a boil. Once boiling, immediately stir in salt and pour over the rice. Cover with heavy duty foil and bake at 375 until tender, about 1 hour. Remove from oven, uncover and fluff with a fork. Cover with a towel and let stand for 5 minutes. Season with parmesan or fresh herbs, if desired. It is delicious even on its own.
