Strawberry Jello

This is delicious and refreshing to take along on a summer picnic! I have found that it "sets" better if you use a little more powdered jello. If you use a couple tablespoons from a 4th box, just store the rest in an airtight container and save for later. I've actually started buying large boxes of Jello at Gordon Food Service, it's far cheaper this way. There are 6 1/2 tablespoons of gelatin in one 3 ounce box. Every year I pick strawberries, I put up about 10 bags just for this recipe. Just place 1-1/2 quarts of washed berries in a freezer bag and label for jello-now you can enjoy this all through the year!


3 small boxes ( 3 ounces each) strawberry Jello

1 1/2 quarts frozen strawberries

8 ounce container whipped topping

2 cup boiling water


Boil water, add jello and stir until dissolved. Add berries and stir until they are broken up. If the mixture is not yet "gelling", place in the refrigerator for a few minutes. Use a mixer to break up any large berries. Fold in cool whip. Pour into a trifle dish; chill. This is best used the same day.
