1-11 or 15 ounce can mandarin oranges, drained and juice reserved
1 cup pecans, finely chopped
Dressing:
1 cup mayonnaise
4 tablespoons sugar
1/2 cup of the reserved juice
1/2 teaspoon vanilla
Combine cabbage and oranges in a large bowl. Mix together dressing ingredients and pour over slaw mixture. Chill in refrigerator for a few hours and mix in pecans just before serving.
This is my husband's favorite slaw! It's absolutely delicious and couldn't be simpler!
Had the salad at the 2012 Mid-Winter Conference. So good that I had to come get the recipe.
