Grandma Sharon's Apricot Jello

1-6 ounce apricot or peach jello
1-20 ounce can crushed pineapple, undrained
1/4 cup sugar
8 ounces cream cheese, softened
1-6 ounce apricot baby food, or unsweetened apple sauce
1-12 ounce whipped topping, thawed
1/2 cup chopped walnuts

Stir jello into pineapple in a small saucepan.  Boil over low heat for 5 minutes.  Cool. (To speed up this process, simply put jello mixture into a small bowl, then "float" bowl in a larger bowl filled with ice.)  Once it's slightly gelled, place mixture into a large bowl with sugar, cream cheese and baby food.  Beat with hand mixer until thoroughly combined.  Blend in whipped topping.  Fold in nuts.  Place in a large jello mold sprayed lightly with cooking spray.  Chill overnight.

Here's another family favorite we have at every holiday!  It's affectionately known as "the baby food jello".
