Lemon Balm Iced Tea

1 bunch lemon balm
1 small lemon, thinly sliced
4 mint tea bags
2 cups boiling water
3 tablespoons honey
4 cups cold water

Mix the lemon balm, lemon slices, and mint tea bags in a medium sauce pot. Pour in the boiling water. Cover and steep for 5 minutes. Remove the tea bags, stir in honey and cool. Strain the lemon balm and slices; add cold water and stir well. Chill. Garnish with fresh lemon balm or mint leaves. You can also freeze lemon balm or mint leaves into ice cubes for the tea!
