I love making these delicious, spiced muffins throughout the year, but especially in the fall. They're great with coffee or mugs of hot apple cider!
2 cups flour
3/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon cloves
1-1/2 cups fresh or frozen blueberries
1 tablespoon flour
1/3 cup butter, softened
1 cup cream cheese
1/2 cup milk
2 eggs
1 teaspoon vanilla
1-1/2 tablespoons sugar
Spray 14 muffin cups with cooking spray. In a large bowl, combine flour and the next 6 ingredients (sugar through cloves). Put berries in a a small bowl and sprinkle with the 1 tablespoon flour; toss gently. In a medium bowl, beat butter and cream cheese for 1 minute. Add milk, eggs, and vanilla; beat well. Add to flour mixture. Stir just until moistened. Fold in the berries. Spoon into 14 muffin cups; sprinkle with the 1-1/2 tablespoons sugar. Bake at 425 for 15 minutes.
