Almond Chicken with Rice

I love this recipe-it has such a wonderful flavor! It's another easy dish to take a meal to someone and it freezes well too.


6 half chicken breasts
salt and pepper to taste
paprika
1/2 cup slivered almonds
1/2 cup butter
1/2 cup chopped onion
juice of 1 lemon
1/4 cup cooking sherry
cooked rice

Cut the chicken into large pieces. Place in a baking dish and sprinkle with salt, pepper and paprika. Brown almonds in butter. Remove almonds and in same skillet saute onion. Add lemon juice, sherry and almonds, stirring well. Spoon mixture over chicken pieces. Cover with foil and bake 1 hour and 15 minutes at 350. Spoon over white or brown rice. Serves 6
