Jane's Cream of Cheese Soup

I have to laugh everytime I see this recipe. A good friend of ours made this when we were over for dinner. After a few spoonfuls, my husband enthusiastically said, "This soup is aweful!" We all had a good laugh-he actually meant to say awesome, which it is!


1/2 cup grated carrots
1/2 cup finely chopped celery
1 cup water
2 tablespoons chopped onion
1/4 cup butter
6 tablespoons flour
2 cups milk
2 cups chicken broth
1/2 pound sharp cheese, diced

In a small saucepan, heat the 1 cup of water until boiling; add the carrots and celery and cook until tender. In a large saucepan, cook the onion in butter until tender, but not browned. Stir in the flour. Add the milk and broth; whisk constantly over low heat until thickened. Add the cheese, then stir in the vegetables, along with the cooking water; heat through.
