This is a delicious twist on the typical broccoli salad-I like using a variety of colored cauliflowers.
1 medium head of cauliflower, cut into bite size pieces
1 medium head of cabbage coarsely chopped
1 medium onion, chopped fine
1 pound of bacon cooked crisp and crumbled
2 cups mayonnaise (less is fine)
1/3 cup parmesan cheese
3 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon vinegar
Thoroughly blend mayonnaise, cheese, sugar, salt, pepper, and vinegar. In a large chilled bowl, combine cauliflower, cabbage, onion and bacon. Mix well and chill for 1 hour.
