Grandma Sharon's Spinach Orange Salad

This simple, delicious salad is another favorite from Grandma Sharon. I usually make it as listed below, but adding some chopped egg or strawberries would be great here too.

1-16 ounce bag fresh spinach
1 cup thinly sliced celery
1-11 ounce can mandarin oranges, drained

Dressing:
1/4 cup oil
2 tablespoons white vinegar
2 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup sliced almonds
4 teaspoons sugar

In a glass jar or dressing container, combine the oil, vinegar, sugar, salt and pepper. Shake well and refrigerate. Place almonds and 4 teaspoons of sugar in a small pan . Stir constantly over medium heat until golden. Set aside. In a large bowl, combine the spinach, celery, oranges and almonds; toss. Mix in the dressing just before serving.
