Hobo Dinners (Campfire Hamburger Packets)



This is another delicious recipe my step-mom put together. She put these on the grill. I like making these while camping but they do well in the oven too. They will make your house smell incredible and the flavor is out of this world! This is another one of those recipes you just throw together using whatever amounts you want but I'll tell you how we do them to give you a general idea.

2 lbs ground chuck or round
1 large head of cabbage
6 medium potatoes, peeled and sliced thick
baby carrots
1 medium sweet Vidalia onion, sliced
2 envelopes Lipton onion soup mix
heavy duty aluminum foil
3 to 6 tablespoons butter

Lay 6 sheets (approximately 12 inches each) of heavy duty foil on your counter. Place one large or at least 3 small cabbage leaves in center of each piece of foil. (This will keep your beef from sticking.) Now, divide the 2 pounds of beef into 6 equal, thick patties (about 1/3 pound each). Place 1 patty on top of each of the 6 cabbage leaves. Divide the potato slices evenly between the 6 packets, just lay them on top, and now add your carrots and onions. Before opening, shake the soup packets to make sure spices are evenly mixed. Sprinkle the 2 packets of soup mix evenly over 6 patties. You can use more or less, to taste. I used half an envelope per packet recently but I found them to be a little spicy. Finally, add about 1/2 tablespoon of butter per packet; just drop it right in there-it combines with the soup mix to make a little broth. Now, roll up each side of foil, tenting it up to allow for steam, and seal tightly. Cut at least four 1/2-inch slits in foil to allow steam to escape. Place on a rimmed baking sheet and bake at 35o degrees for about 50 minutes. If you're using the grill they will take about an hour. Be careful when opening, they are hot, hot, hot! Enjoy! Great with cornbread! 6 servings
