Lemon-Garlic Grilled Chicken with Basil Aioli

I'm always on the lookout for great grilling recipes. These garlicky chicken breasts are delicious with the fresh basil aioli.



6 boneless skinless chicken breast halves
1 tablespoon olive oil
4 large garlic cloves, minced, divided
1/3 cup grated lemon peel (from about 3 large lemons)
2 tablespoons chopped fresh parsley
1-1/2 teaspoons lemon pepper seasoning
1/2 cup mayonnaise
1/2 cup chopped fresh basil

Heat grill. Brush chicken breasts with oil. In a small bowl, stir together 3 of the minced garlic cloves, lemon peel and parsley; rub onto both sides of chicken breasts. Sprinkle with lemon pepper seasoning. Place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals; cover grill. Grill 8 to 10 minutes or until no longer pink in center, turning once. In another small bowl, stir together mayonnaise, basil and remaining 1 minced garlic clove. (I think this tastes best chilled.) Serve aioli with chicken.
