Wild Rice Salad

I've made this delicious salad for years. The wild rice and fruit go great together and the cashews add a nice crunch. Rhinestone Farm, out of Minnesota is a great place to mail order wild rice.

1 cup uncooked wild rice
2 cups diced cooked chicken
1-1/2 cups halved green grapes
1 cup sliced water chestnuts
3/4 cup light mayonnaise
1 cup cashews
lettuce of your choice

Rinse rice and cook according to package directions; drain well and cool. Spoon into a large bowl. Add chicken, grapes, water chestnuts and mayonnaise. Toss gently with a fork. Cover and chill. Before serving, add cashews and place on a bed of lettuce, if desired.
