Blueberry Soup


So I asked my 9-year-old daughter if she wanted to make a blueberry soup. "Blueberry soup?!", she asked.........my kids are used to me trying some unique things, like the peanut soup from Mount Vernon. That recipe will come later....it's really good! Well, I couldn't get my husband to try this but the kids enjoyed it. It is pretty yummy! It's probably going to be one of those special treats reserved for our girl nights or a ladies tea.

4 cups fresh or frozen blueberries
3 cups water
2/3 cup sugar
1/4 teaspoon ground allspice
1 carton (16 ounces) vanilla yogurt
additional yogurt for garnish

In a large saucepan, combine the blueberries, water, sugar and allspice. Bring to a boil, stirring occasionally. Remove from the heat. Process blueberry mixture in batches in a blender for 1-2 minutes or until pureed. Strain through a fine mesh colander or sieve to remove seeds. Cool completely. Place cooled blueberry mixture in a blender with the yogurt; process until smooth. Cover and refrigerate until chilled. Garnish with yogurt if desired. You can also top it with a little freshly grated nutmeg.
