White Flesh Nectarines with Raspberry Sauce

I've had this recipe from a magazine clipping for years now and have always wanted to try it. I usually end up getting the nectarines and the kids eat them up or I wait too long and they're too soft. Well, this was incredible! As much as I love to bake, I need to find some recipes for healthier desserts-we all love dessert in this household! This was perfect on its own, although it would be wonderful with just a little slice of pound cake (would that make it too unhealthy ?)

3/4 cup raspberries
(frozen works fine, just add a little more apple juice)
1/4 cup apple juice
1 tablespoon sugar
1/4 cup whipping cream
3 to 4 white flesh nectarines

In a blender or food processor, combines raspberries, apple juice and sugar. Cover and blend until smooth. Strain sauce in a fine mesh sieve, discard seeds and set aside. In a small chilled mixing bowl, beat cream with chilled beaters until very soft peaks form. (As you can see in the picture, I beat this a tad too long so it didn't drizzle as well). Slice the nectarines into thin wedges. Divide the raspberry sauce onto 4 dessert plates. Arrange nectarine slices on top of sauce and drizzle cream on top.
