Grilled Chicken and Pasta Salad

I love trying new recipes and having lots of variety in our meal plan. But it's nice to have a couple of meals you can throw together at the last minute for those crazy days.
This is my hubby's favorite! We love making this throughout the summer when fresh veggies taste so good.

1 pound whole grain penne, corkscrew pasta
or pasta of choice
1 pound marinated grilled chicken breast, cubed
(Anne's Italian Dressing works great) or marinated in
your favorite dressing, I love Newman's Olive Oil & Vinegar
cubed sharp cheddar, or cheeses of choice
fresh chopped cucumbers, tomatoes, red and
yellow peppers, veggies of your choice

Cook pasta in a large pot of boiling water until al dente. Drain pasta and rinse under cold water. Drain well and place in a large salad bowl. I usually add a little Italian dressing now, and toss to coat, to keep pasta moist. Add whatever amounts of chopped veggies and cheese you like. Add chicken and desired amount of dressing. Toss well to coat evenly. Serve immediately or chill for a few hours.
