I've got a few favorite recipes for chocolate chip cookies. This one is great when you're in the mood for a more "gourmet" cookie-it's a wonderful combination of fruit and nuts, oats and chocolate chips. They're really good!
1/2 cup butter, chilled, or at room temperature
1/2 cup shortening
1 cup brown sugar, light or dark is fine
1/3 cup granulated sugar
2 teaspoons vanilla
3/4 teaspoon salt
1 tablespoon cider or white vinegar
1 large egg
1 teaspoon baking soda
1-3/4 cups Unbleached King Arthur White Whole Wheat Flour
1 cup quick-cooking rolled oats
3 cups chips, dried fruit, and/or nuts of your choice
Preheat the oven to 350 degrees. Lightly grease two baking sheets. In a large mixing bowl, beat together the butter, shortening, sugars, vanilla, salt, and vinegar. Beat in the egg, then the baking soda, flour, and oats. Stir in the chips and fruit of choice. Drop the dough, by tablespoons, onto prepared baking sheets. Bake the cookies for 12 to 14 minutes, until light golden brown. Remove from oven and cool on a wire rack. * I always put a piece of store-bought white bread in with my cookies when I store them-it helps them to stay soft and chewy.
