Brown Sugar and Ginger-Glazed Salmon

I'm really not into seafood, but I absolutely love salmon!  I love trying out new recipes with different rubs or glazes.  This is actually a recipe my kids found on one of those little cards at the grocery store.  It really is outstanding!  Broiling it gives it a sweet, caramelized flavor-it would be great with a savory rice.

4 (4-ounce) salmon fillets
1 tablespoon dark brown sugar
1 teaspoon Dijon mustard
1 teaspoon low sodium soy sauce
1/4 teaspoon ground ginger

In a small bowl, combine sugar, mustard, soy sauce and ginger; set aside.  Season fillets with pepper to taste.  Place skin side up on a broiler pan coated with cooking spray.  Preheat broiler to high.  Broil 5 minutes.  Turn salmon; brush with glaze.  Broil 3 to 5 minutes more or until sugar melts and fish flakes easily with a fork.    Serves 4
