Roasted Asparagus with Feta

I honestly don't think my husband ever tasted asparagus until he married me!  I don't know that I've ever seen it covered in chocolate sauce!  :)  So I got him to try it sauteed with fresh green beans and toasted walnuts, (we had this at a Texas restaurant-it's awesome!)  He discovered he actually likes it!  This is the other way he loves it-it's really good!  'Ridiculously simple, but I'll tell you how I  make it.  There are many versions of this floating around on the internet, like with vinaigrettes, but I find the less you mess with veggies the better, keep it simple and let the roasting bring out the flavor!

1 pound washed and trimmed asparagus
extra-virgin olive oil
salt and pepper to taste
feta cheese, crumbled (about 1/2 cup)

Preheat the oven to 350 degrees and place rack in center.  Line a 9x13 baking dish with aluminum foil.  Drizzle a little olive oil on bottom of pan.  Place asparagus in pan and drizzle lightly with olive oil.  Sprinkle with salt and pepper, to taste.  Top with crumbled feta cheese. Roast approximately 25-30 minutes.   Serves 4-6
