Oatmeal-Blueberry Cookies










Have I mentioned I love blueberries?!  I think they've got to be my favorite fruit!  There are so many yummy things you can make with them and they keep so much longer in the refrigerator than strawberries do.  Not to mention they're simply delicious!  I'm so thankful we were able to go picking the other day and get a few- it's been a very bad year for fruit. The blueberries didn't seem to be affected as much as the cherries and apples were.  I think this year, more than ever, it's important to get out and support our local farmers!  Now as to this cookie........this is a recipe I'm actually going to modify when I get a chance.  They were delicious but they tended to spread out too much ( maybe a little too much butter and not enough flour?)  But the flavor was sooooo good!  I've made so many different oatmeal cookies before, now why haven't I ever thought to add fresh blueberries to them?  Seems so simple, but so delicious!  So if you make these, play around with the ingredients and let me know what you'd change!  :)  We're going to have a little "test kitchen" fun and come up with a winner! 


1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1-1/2 cups rolled oats
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup brown sugar
1 large egg
2 tablespoons honey
1/2 cups fresh blueberries

Mix dry ingredients together and set aside.  In a large bowl,  cream butter and sugars; add egg and honey and mix well.  Stir in the dry ingredients and mix well. Gently fold in the blueberries.  Drop by rounded teaspoons onto lightly greased cookie sheets.  Bake at 350 degrees for about 8-10 minutes (until golden on edges and just set).  Cool on cooling rack.  Makes about 2-3 dozen.
