Summer Fruit Salad with a Lemon-Mint Simple Syrup

I'm generally not one to add a dressing to a fruit salad-it's always good on its own.  But this is kinda' like Ina Garten adding a little coffee to bring out great chocolate flavor.  The lemon and mint in this simple syrup really add a refreshing taste to the fruit!  It's really delicious and great served chilled on a hot summer day! 

1/4 cup sugar
1/4 cup water
3 sprigs fresh mint
zest and juice of 1 lemon
dash of salt
4 cups or more cubed watermelon
4 cups fresh blueberries
strawberries and grapes (halved)
* you can go liberally on the fruit

In a small saucepan, simmer the sugar and water over low heat.  Remove from heat and add the fresh mint sprigs.  Cover and steep for 10 minutes or more.  Add lemon juice, zest, and salt; stir together and toss with fruit.  Let stand for 15 minutes before serving or refrigerate until ready to serve.  Best chilled.  Excellent with a scoop of raspberry sorbet!
