Blueberry Oatmeal Muffins




My dear mother-in-law made these recently and wanted me to try them.  This is the same dear mother-in-law who prides herself on being a loyal supporter of Duncan Hines.  :)  They were very good!  Needless to say, I was impressed!  It's more of a hearty muffin, perfect for a healthy snack or a quick breakfast when you're on-the-go.

1/2 cup all-purpose flour
1/2 cup whole wheat flour
2-1/3 cups quick oats, plus 1/2 cup for topping
1/2 cup brown sugar
1/2 cup granulated sugar
3 tablespoons wheat germ
1-1/2 teaspoons cinnamon
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup buttermilk
1/2 cup canola oil
1 egg
1/3 cup boiling water
1 cup blueberries

Preheat the oven to 375 degrees.  Lightly spray a 12-cup muffin pan.  In a large bowl, combine flours, oats, sugars, wheat germ, cinnamon, baking soda, and salt.  Add buttermilk, oil, and egg.  Beat just to combine.  Pour 1/3 cup boiling water over mixture and set aside for 5 minutes.  Stir in blueberries.  Spoon batter into muffin cups.  Sprinkle with remaining oats.  Bake for 20 minutes or until toothpick inserted in center comes out clean.  Cool in pan for 10 minutes.  Remove to wire rack to cool completely.  12 muffins
