Cracked Wheat Bread




I've tried many recipes for wheat bread and have never found one we all liked.  'Nothing like feeling like you just ate a brick for lunch!  I made this one, which calls for bread flour and whole wheat, and it was really good!  Very soft and moist, although I must confess that I was out of regular wheat, so I used King Arthur's white wheat.   Okay, so maybe this was a little weak on the wheat, but it was really good and that's how we like it!  :)

1-1/4 cups warm water
2 tablespoons honey
2 tablespoons butter, melted
2 tablespoons dry milk powder
1-3/4 teaspoons salt
2 cups bread flour
1-1/3 cups whole wheat or white whole wheat flour
1/4 cup cracked wheat
1-1/4 teaspoons instant yeast

In the bowl of a stand mixer with dough hook attached, combine warm water, honey, butter, dry milk powder, and salt.  Add flours and cracked wheat, then add yeast on top of flours.  Stir to combine then mix well for 2 to 4 minutes, until dough is smooth and cleans the side of the bowl.  Place in a lightly oiled bowl, turning to coat the top.  Cover with damp bread towel or plastic wrap and set aside to rise about 2 to 3 hours, or until doubled in size.  Punch down dough and gently form into a loaf; place in a 9x5 bread pan that has been lightly sprayed with cooking spray.  Cover with towel and set aside to rise about 1-1/2 hours.  Bake in a  350 degree oven for 25 to 30 minutes or until light golden on top.  Remove immediately to a cooling rack.
