Appalachian Blueberry Pie









This recipe was on a beautiful card my sweet friend gave me years ago.  Obviously, being the cooking fanatic I am, I made it that very week.  It's got to be one of the best blueberry pies I've ever tried!


Filling:
4 cups fresh blueberries
1/2 cup sugar
3 tablespoons flour
1/4 teaspoon almond extract
Topping:
1/2 cup flour
1/2 cup brown sugar
2 tablespoons butter

Combine filling ingredients and transfer to a pastry-lined 9"pie pan.  In a small bowl, combine flour and sugar; cut in butter until it resembles coarse crumbs.  Sprinkle over pie.  Cover edge of pie with foil. Bake at 375° for 25 minutes. Remove foil and bake for an additional 20 to 25 minutes. Crust should be golden brown and fruit tender. ......note - Whew!  This sure is sweet-too sweet!  I hadn't made this in a while, but remembered it being very good.  Well, I made it the other day; it's delicious but could definitely use less sugar, especially if you have sweet berries!  I think I'll try cutting the sugar by half for both the filling and the topping.
